Apple Butter

4 pounds tart apples
2 cups apple cider
3 to 4 cups sugar
1/2 tsp. ground cloves
1/2 Tbs. ground cinnamon
1/2 tsp. ground allspice

Put apples in kettle and cook until apples are soft. Rub through sieve.
Measure the mixture and add exactly 1/2 as much sugar as you have cups of apples.
Return to kettle with sugar and spices. Simmer until dark and thick. It may take as long as 2 hours. Stir often.
Pack in hot jars.
