Asparagus
Muffins
1 1/3 cup flour
1 cup corn meal
1/4 cup sugar
1 Tbs. baking powder
1 tsp. salt
Mix in one bowl.
1 cup milk
1/2 cup oil
4 eggs
Mix in another bowl.
Break the bottom off asparagus then slice into 1/4"
slices but save tips. Combine both bowls and stir in sliced
asparagus. Slice 1/2 pound of cream cheese into 24 cubes using
dental floss.
Fill muffin cups half full of batter. Drop cream cheese cubes on
top of batter, then cover cheese with batter. Top with asparagus
tips.
Bake at 400 degrees for 15 minutes. |
