Charleston Coconut Pie

 

4 eggs
1/2 cup self-rising flour
1 cups sugar
1/4 cup (1/2 stick) butter melted
 
2 cups milk
1 teaspoon vanilla extract
1 (8-ounce) can flaked coconut
 
1. Preheat oven to 350°.
2. Beat all ingredients together and pour into a 10" pie plate.
3. Bake 45 minutes.
Although the filling seems loose, do not bake the pie any longer.  It will set and make its own crust as it cools in the refrigerator.  Serves 12.
