Coconut Pound
Cake
Cream thoroughly:
1 cup white Crisco
2 cups sugar
Add:
5 eggs - one at a time and beat 2 min. each
2 cups flour - regular, unsifted
1 1/2 tsp. baking powder
1 tsp. salt
1 cup buttermilk
1 tsp. coconut extract
1 tsp. vanilla extract (optional)
1 - 3 1/2 oz. can Angelflake coconut
Mix well. Spread Pam in a tube pan. Bake at 325 degrees for
55 - 60 minutes.
Glaze
1 cup sugar
1/2 cup water
1 tsp. coconut extract
Heat until sugar dissolves. Poke holes in cake and spoon
glaze over hot cake. Leave in pan for at least 10 minutes.
