Mandarin Spinach
Salad
Salad:
8 cups washed, torn spinach
1 cup chopped celery
2 green onions with tops, chopped
1 (11 oz.) can mandarin oranges, drained
1 (2 oz.) package slivered almonds, toasted
Toss.
Sweet-and-Sour Dressing:
1/4 cup vegetable oil
2 Tbs. vinegar
2 Tbs. sugar
5 drops of hot sauce
1 tsp. chopped fresh parsley
1 tsp. salt
Dash of pepper
Combine in a jar. Cover jar and shake
vigorously. Pour over salad just before serving.
Yield: 1/2 cup dressing.
