Marinated Mushrooms

1/2 tsp. salt
1/2 tsp. dried tarragon
1/2 tsp. sugar
Pepper to taste
3 Tbs. lemon juice
1/2 cup olive oil
1/2 lb. fresh mushroom caps

In a bowl, combine salt, dried tarragon, sugar, fresh ground black pepper, lemon juice, olive oil. Beat to blend well, then pour over fresh mushroom caps, well cleaned. Marinate at room temperature for 4 hours, or overnight.
