Okra-Bacon
Casserole
1-1/2 pounds small, young, fresh okra
3 large ripe tomatoes, chopped
1 medium onion, chopped
1 small green pepper, seeded and chopped
Salt to taste
5 strips bacon
Slice okra into thin rounds. In a greased 2 1/2
quart casserole arrange okra, tomatoes, onion and green pepper
in layers. Season each layer with salt. Lay bacon over top.
Bake at 350 degrees for 1 1/2 hours.
Yield: 6 to 8 servings.
