Pear Relish
1 peck pears - about 15 pounds
12 medium onions
12 bell peppers
1 or 2 datil peppers
1 quart white vinegar
3 cups sugar
3 Tbs. salt
1 1/2 Tbs. celery seed
1 1/2 Tbs. dry mustard
1 1/2 Tbs. turmeric
Grind pears, onions, and peppers. Drain and put
in a kettle. Add vinegar, sugar, salt, celery seed, mustard, and
turmeric. Cook 15 minutes. Seal in hot jars. Makes 9 pints.
