Sauces
Honey - Mustard Sauce
A mixture of honey and Dijon mustard, with some
crushed garlic, lemon juice and salt. For milder version, add
mayonnaise to taste.
Calypso Sauce
Mix well, together, 2 parts mayonnaise, 1 part
tomato ketchup, 1 tsp. brandy, or to taste.
Remoulade Sauce
To mayonnaise, stir in small amounts of anchovy
paste, chopped gherkins, capers, parsley, chervil and tarragon.
Horseradish Sauce
To 1/2 cup mayonnaise stir in 1 heaping tbsp.
Kraft's Horseradish Sauce or 1 tsp. fresh grated horseradish.
Curry-Chutney Sauce
Mix together crushed garlic, minced onion, curry
powder, chopped chutney, lemon juice, chili sauce and
mayonnaise.
