Zucchini Muffins

2 eggs
1 cup oil
2 cups sugar
2 tsp vanilla
3 cups flour
1/4 tsp baking powder
2 tsp baking soda
1-1/2 tsp cinnamon
1 tsp salt
3/4 tsp nutmeg
1 small can crushed pineapple
2 cups shredded zucchini
1 cup chopped nuts

Mix together at high speed.  Spoon in muffin tins.  Bake at 350 degrees for about 20 minutes, or until done.  For mini-size muffins, bake around 15 minutes, depending on your oven.  THEY ARE WONDERFUL!!!
